Egg & Prawns

This classic open-faced sandwich, to which we’ve added a twist, is our best-seller.

It is assembled as follows:

• rye bread with butter
• organic eggs
• hand-peeled shrimp
• our homemade tarragon mayonnaise
• a sprinkle of Piment d’Espelette
• dill, chives, and cress

We’ve added Piment d’Espelette to our egg and shrimp sandwich to give it a bit of bite and character compared to the more traditional version.

Piment d’Espelette comes from the foothills of the Pyrenees in France, right on the border with Spain. It is an AOP-certified spice—a designation ensuring very high quality and guaranteeing that the product can only bear this name if it originates specifically from the small town of Espelette.
