In August 2020, Iben Herrik opened the city’s smallest smørrebrød restaurant in Store Kongensgade. Iben’s great love and passion for smørrebrød and high-quality ingredients form the basis for the good pieces. It can be tasted in every mouthful.

Iben is originally from Funen, but after completing her education as a bilingual correspondent, she quickly made the trip to Copenhagen. Here she started a family and got an administrative job at Claus Meyer. Here she was in many different roles for almost 20 years and learned everything about food quality, the culinary profession, food policy, gastronomic honesty and timely care. What an apprenticeship!

After COVID-19, Iben decided to become independent, and it was smørrebrød that she threw herself into. Her large network within the culinary world helped push her over the edge, where courage usually ends. From the very beginning, Ibens allied herself with chef Kim Kops, who was a former dear colleague from the Meyers era, and since August 2020, Ibens Smørrebrød has fought its way into the Copenhagen smørrebrød scene, where the competition is fierce. Iben always refers to her competitors as colleagues, whom she greatly respects – and in some cases also admires greatly.

Through a growing group of tourists who daily find their way to Denmark’s Smallest Smørrebrød Restaurant, Iben and her team have the opportunity to tell the story of Danish smørrebrød, the good ingredients and the origin of the individual pieces. This is a great daily joy.
