Meet Kim
Kim Kops is a professional chef and has – in addition to an outstanding ability to both innovate and prepare open sandwiches – an exceptional ear for languages. This means that he can switch between 5-6 languages! He is therefore the perfect (co)host on Ibens Smørrebrød. Kim and Iben’s paths crossed years ago in the Meyers group, where they both started their careers. In addition to open sandwiches, Kim is also an excellent dessert chef.


Meet Agnes
Agnes started with us in the fall of 2023. From the beginning, she demonstrated an exceptional ability to provide the best service to our guests with her smiling and friendly nature. A dream of a colleague! Last summer, Agnes started her education as a Landscape Architect at the University of Copenhagen, Frederiksberg Campus (what we used to call the Agricultural University in the old days). Fortunately, she has time in her schedule to be with us a day or two a week.
Magnus & Bjarne
My old friends – also known as Bjarnus – who helped me renovate the premises in Store Kongensgade, who tirelessly came up with lots of good ideas, criticism, suggestions and fun ideas. Without them, I would not have been able to create my little place. And Bjarne is also the photographer behind the beautiful picture of the smørrebrødsjomfruen, which has become a kind of logo for Ibens Smørrebrød.


Marianne
A good friend who also tirelessly helped me get started: we picked up vintage furniture from, among others, Sorø Svæveflyverklub (see the picture), we visited countless second-hand shops to get tableware and furniture in place. We discussed tastes, we tasted, and we had a good time. Marianne was also there behind the counter when there was a shortage of hands, good service, and moral support.
Eva
My dear old colleague, who painted the somewhat worn-out garden furniture Copenhagen green, sewed cushions for the bench, made me stop while the game was going well when she thought it was time for a beer, wiped my eyes when emotions took over, and was by my side in the starting phase. Fortunately, she still often stops by, so that everything is safe and sound.


Birgitte
Birgitte lives near Ibens Smørrebrød and is a real cook, a foodie of rank. She was not slow to jump behind the counter when she could sense that helping hands were needed. Birgitte introduced us and the guests to her unsurpassed biscuit cake, which is still legendary and appears on the menu now and then.
Julie
Beautiful and artistic Julie helped us for a long time behind the counter. She won the hearts of many with her charming spirit, and her smile made many melt.


Nynne
Also an old colleague, who showed up at the right moment to help Iben finish up for a summer vacation. Best of all, when Iben was close to being very stressed, Nynne came and asked if she wouldn’t just help. What a saving angel!
Karl Emil
He is Agnes’ little brother, and well brought up at home to tackle pretty much any task he is given – and without a hitch, that’s for sure. When Agnes started her studies, we had the pleasure of Carl Emil for a while. He came and spread good cheer and was a great help – what a great acquaintance!


Randi
Randi is from Ribe and a former colleague from Quedens Gaard in Ribe, where Iben made his very first smørrebrød folders. Randi moved to Copenhagen, stopped by, tied her apron around her stomach and got to work. A cool Jutland with lots of strength and love.
Oskar
Iben’s oldest son, who is not only her harshest critic, but also her great inspiration for running the restaurant. He has an innate gene for business in diametrical contrast to his mother. He always stands up when other eyes are needed on the challenges, thinks big and good thoughts and keeps his mother firm in her original decisions. An indispensable support. Oskar has even created this website, from scratch, full of passion and skill. Thank you Oskar.
